I mastered the art of making crepes last week.
1 cup flour
1 egg
1 cup milk
¼ cup sugar
dash of salt
2 tablespoons oil
½ teaspoon vanilla

Combine all dry ingredients (flour, sugar, salt) and add milk slowly while stirring to avoid lumps. Add the egg, oil, and vanilla. Cook about 1 minute for each side in hot crepe maker or skillet. Use Pam and spray often. Don't foget to go to your local farmers market for fresh fruit.
